Regular hardneck garlic scapes twist into loops when ready to pick. Elephant garlic (a leek relative, not real garlic) produces thick, tall, perfectly straight flower stalks with zero natural curling.
- When to harvest straight elephant scapes
Pick them while young, tender and fully green, before the top flower bulb swells big. If left too long, stalks turn woody and tough. Trimming scapes sends all nutrition to grow those giant elephant garlic bulbs underground.
- Taste & use
Elephant garlic scapes have a very mild, sweet garlic taste. Perfect for stir-fry, pickles, pesto and salads, just like curly hardneck scapes.
