Why Cut Garlic Roots After Curing Instead of Immediately After Harvest?

Proper post-harvest handling has a significant impact on garlic quality and storage life. While many growers trim the stalks soon after harvest, the roots are often left intact until the curing process is complete.

So why do many commercial growers wait to cut the roots?

1. Protect the Garlic Bulb During Curing

Freshly harvested garlic is still alive. During curing, the outer wrappers and neck gradually dry, forming a natural protective layer around the bulb.

Keeping the roots attached during this period helps avoid unnecessary damage to the basal plate (the flat bottom of the bulb where the roots grow). A healthy basal plate helps maintain bulb integrity throughout the curing process.

2. Reduce the Risk of Infection

Immediately after harvest, both the neck and the root plate contain fresh plant tissue.

Cutting the roots too early creates a fresh wound that may allow fungi or bacteria to enter if curing conditions are not ideal.

Allowing the garlic to cure first gives the tissues time to dry and seal naturally. Root trimming after curing generally produces a cleaner, drier cut with less risk of contamination.

3. Preserve Bulb Quality During Drying

During curing, moisture gradually moves from the neck, roots, and outer tissues while the bulb dries to a stable moisture level.

Leaving the roots attached until curing is complete helps avoid excessive handling of freshly harvested bulbs and reduces the chance of bruising or damaging the protective wrappers.

4. Make Cleaning Easier

Once curing is complete, the roots become dry and brittle.

At this stage, they are much easier to trim neatly, producing a cleaner appearance with less effort. Dry roots also create less debris and are less likely to wrap around cutting equipment.

For commercial operations, this improves both efficiency and product presentation.

5. Prepare Garlic for Market

Most fresh-market garlic is sold with:

  • Clean bulbs
  • Uniform root length
  • Trimmed stalks
  • An attractive appearance

Cutting the roots after curing creates a more consistent product that is easier to grade, package, and sell.

Uniform trimming is especially important for garlic destined for supermarkets, wholesalers, or export markets.

Increase Efficiency with Root Cutting Equipment

Manually trimming thousands of garlic bulbs can be slow and labor-intensive.

A Garlic root cutting machine can quickly remove dried roots to a consistent length, reducing labor costs while improving processing efficiency and product appearance.

When used after curing, root cutting becomes faster, cleaner, and more suitable for large-scale commercial production.

Final Thoughts

Leaving garlic roots intact during curing and trimming them afterward is a common practice among commercial growers. This approach helps protect the bulbs during drying, reduces the risk of contamination, simplifies cleaning, and prepares garlic for grading and packaging.

For farms handling large harvests, post-curing root trimming also allows processing equipment to work more efficiently, delivering a cleaner and more uniform final product.
